Miracle Minestrone Soup

Tonight we had good ol' comfort-food for dinner. Soup, salad, and Rhodes Rolls. (Man, I've got a soft spot in my heart for those rolls.) It was a long shot but we tried to feed AVH some of the veggies in the soup. We were shocked that he ate them without much problem. A miracle from heaven! Or maybe just the Campbell's Soup company. That kid NEEDS more veggies!!!

This soup is super simple but has good flavor, inspite of the main ingredient being canned Minestrone soup. I know, sounds kind of yuck - but it really is tasty. The things you add to the soup makes it a million times better than just eating it right out of a can.

Miracle Minestrone Soup
(part of the miracle is that this goes together really quick)

Brown together:
1 lb. hamburger
1 onion, chopped
3 stalks of celery, chopped

Add:
3 cans Campbell's Minestrone soup
3 soup cans of water
1 large (28 oz.) can Bush's Homestyle Baked Beans (take out the bacon chunks)
3 Tbsp. Worcestershire sauce
2 tsp. oregano
salt & pepper
1-2 Tbsp. brown sugar (optional)

Simmer for 15 minutes. That's it.

Notes: I would never leave the brown sugar out - but that's just me. Bring on the shuga!
