Mango Fever

Don't you feel like being HERE . . . .

. . . when you eat one of THESE?!


I sure do. I love, love, love mangos! And lucky for me I got my hands on about 3 dozen of them this week for a steal and I had to find lots of yummy things to do with them. (I just got involved in an insanely awesome food co-op and I got an 8lb. box of mangos for five bucks!)

Here are a couple of recipes that I made this week that were both killer. The mango salsa is fool-proof and it's so good. The mango mousse I went out on a limb to try and boy was I glad I did! If you are looking for a yummy, light, summery dessert this is a great one and super simple.


Mango Salsa

3 chopped mangos
2 diced avocados
1/2 a red onion, diced
cilantro, chopped
1-2 Tbsp. rice vinegar or fresh lime juice
S & P
a few dashes of hot sauce

Mix all of the ingredients together to your taste and chill. Serve with tortilla chips. The acid will keep the avocado from turning brown and you can even eat it the second day. You may also add pineapple if you want to.

Mango Mousse

3 chopped mangos
1 14 oz. can sweetened condensed milk
1 Tbsp. fresh lime juice
8 oz. Cool Whip (I use light)

In a blender combine the mango, lime juice, and sweetened condensed milk. Puree until smooth. Fold the mango mixture in with the Cool Whip. Spoon into individual dessert dishes and chill. Makes 6-8 servings. Garnish with fresh chopped mango or strawberries.

Notes: I thought it might be fun if you put the mousse into a pastry bag and piped it out into your dessert dishes with a large star tip. I'll try that next time!

I've got mango fever as well! We have been going crazy the past two weeks with the mango salsa. You should try a Thai dessert that Aaron and I love. It's fresh mangos over coconut sticky rice. You can google it for a great recipe.

I love a good mango! I just started doing the awesome food basket co-op too! I missed out on this week though since Adam is on call (can't pick up at 7 with sleeping kids left home alone) and my fellow co-opers are out of town. Bummer. I would have loved to make some mango salsa and try the mousse!!!
