
OK so I am on this health kick right now . . . a while ago I saw on my friend Tia's blog that her favorite cereal is Kashi Go Lean Crunch! It looked so healthy and yummy that I thought I'd give it a try too. I LOVE it! (Thanks T) I tried the Honey Almond Flax variety. It is great with milk but also good with yogurt and fruit. I have this recipe for Jumbo Breakfast Cookies - which is like a big peanut butter oatmeal chocolate chip cookie that you add breakfast cereal to so you get a little more crunch. I thought this new favorite cereal of mine would be great in them. I haven't given them a try yet because I have eaten all of the Kashi in the house and need to buy more. I thought I'd pass along the recipe though in case anyone wanted to whip up a batch sometime soon. Here it is:
Jumbo Breakfast Cookies
Mix together:
1 1/4 C sugar
1/2 C peanut butter
1 Tb. vanilla
1/2 C butter, soft
1/4 C water
1 egg
Mix together:
1 1/2 C flour
1/2 tsp. baking soda
4 C breakfast cereal of your choice
1/2 tsp. salt
1 C quick oats
1 C chocolate chips
Mix the wet ingredients with the dry. Spoon dough onto an un-greased cookie sheet and flatten slightly (I think the "Jumbo" in the name means to make these cookies big!). Bake at 375 degrees for 13-15 minutes.
PS - Beacause these are called 'breakfast cookies' I'm sure it is OK to eat them as a morning meal, don't you?!
